RECIPE OF THE MONTH: "PUCHERO" (Quechua)

Recipe for 6 people
• 2kg Cabbage
• 1kg Pork, ½ a kg of pork fat/skin
• 2kg Potatoes
• 1kg Yucca/Manioc
• 1kg Sweet Potato
• ½ kg Carrot
• Coriander, mint or spearmint and oregano
• Small amount of oil
• Tablespoon of garlic
• ¼ kg capsicum baccatum chilli peppers (orange)
• Bunch of spring onions.
Boil the pork and the pork skin with some salt to taste.
Wash the cabbage well and cut it into large pieces.
Add the cabbage to the water with the boiled pork, along with carrots cut in sticks (Julienne), the herbs (whole), potatoes, and manioc. Cover the pan and leave to simmer until the vegetables are cooked.
Heat up some oil in a saucepan, add the garlic and capsicum chilli peppers, onion and salt to taste, and leave to brown in the pan. When cooked, blend the sauce ingredients in an electric blender and then mix into or pour over the rest of the ingredients once they are boiled.
